Pecan-Crusted Tilapia

Ingredients

  • 4 large tilapia filets
  • 1/2 cup (120ml) seasoned breadcrumbs
  • 1/2 cup (120ml) pecans
  • 4 tablespoons (60ml) melted salted butter
  • 2 teaspoons (10ml) dried thyme
  • salt
  • pepper

Directions

  1. Preheat oven to 400°F (205°C).
  2. Add pecans to a plastic bag and pound finely using a rolling pin until they're the consistency of breadcrumbs.
  3. Combine pecans, seasoned breadcrumbs, dried thyme, and melted butter in a bowl until evenly mixed.
  4. Line a baking sheet with tin foil and grease with cooking spray.
  5. Place the tilapia filets on the baking sheet and use a paper towel to thoroughly dry the tops of the filets.
  6. Lightly season the tops of the filets with salt and pepper. Go easy on the salt since the other ingredients also have salt.
  7. Coat the tops of the filets with the breadcrumb mixture by adding small amounts of the topping and pressing it firmly into the fish. You should end up with 1/2 cm thick crust on each piece.
  8. Bake for 15 minutes until fish is cooked thoroughly and crust has browned.
