Ingredients
- 4 large tilapia filets
- 1/2 cup (120ml) seasoned breadcrumbs
- 1/2 cup (120ml) pecans
- 4 tablespoons (60ml) melted salted butter
- 2 teaspoons (10ml) dried thyme
- salt
- pepper
Directions
- Preheat oven to 400°F (205°C).
- Add pecans to a plastic bag and pound finely using a rolling pin until they're the consistency of breadcrumbs.
- Combine pecans, seasoned breadcrumbs, dried thyme, and melted butter in a bowl until evenly mixed.
- Line a baking sheet with tin foil and grease with cooking spray.
- Place the tilapia filets on the baking sheet and use a paper towel to thoroughly dry the tops of the filets.
- Lightly season the tops of the filets with salt and pepper. Go easy on the salt since the other ingredients also have salt.
- Coat the tops of the filets with the breadcrumb mixture by adding small amounts of the topping and pressing it firmly into the fish. You should end up with 1/2 cm thick crust on each piece.
- Bake for 15 minutes until fish is cooked thoroughly and crust has browned.
