Ingredients

  • 1 1in thick (2.5cm) ribeye steak
  • Kosher salt
  • Freshly ground black pepper (medium grind)
  • 2 tablespoons (30ml) vegetable oil

Instructions

  1. Get your thickest frying pan (preferably a cast-iron skillet) hot on the stovetop on medium-high heat.
  2. Add vegetable oil and wait for the oil start to look shiny and ripple.
  3. Season the steak genorously on both sides with salt and pepper.
  4. Once the oil is hot add the steak.
  5. Set a timer for two minutes and let the steak cook without touching it.
  6. Flip the steak and cook another two minutes, again - no touching.
  7. Cook another two minutes per side for a total cook time of 8 minutes. The steak will be cooked about medium at this point.
  8. Remove the steak, cover in tin foil and let rest for at least 5 minutes before serving.
