Ingredients
- Ground beef (4 pounds)
- Yellow onions (2 large)
- Garlic (6 cloves)
- Dark red kiney beans (4 cans, drained and rinsed)
- Diced tomatoes with chilis such as Rotel (4 cans)
- McCormick Medium Chili spice packets (4)
- 2 cans hatch green chilis (or whatever chilis you want)
- Tomato paste (1 can)
- Cumin powder
- Chili powder
- Salt
- Pepper
Directions
- Sweat down the onions and garlic in you largest pot.
- Brown ground beef in a separate skillet, drain the fat, and add to pot
- Add all the cans into the pot along with the packets of chili spice. At this point its going to be dry so add water until it is the consistency that you prefer.
- Add salt and pepper to taste so the flavor isn't bland. At this point it probably won't taste like chili.
- Begin to pump up the flavor by adding equal parts cumin and chili powder. You may need to add a lot so keep going until its spicy enough. For extra kick add hot sauce or whatever chilis you have.
- Simmer on low for one hour.
- Serve with jalapeno cornbread (see our recipe), shredded cheese, and oyster crackers.
