Jalapeño Cheddar Cornbread

Ingredients

  • 1 cup (250ml) all-purpose flour
  • 1 cup (250ml) yellow cornmeal
  • 1 cup (250ml) milk
  • 1/3 cup (70ml) white sugar
  • 1 tsp (5ml) salt
  • 3.5 tsp (17.5ml) baking powder
  • 1/3 cup (70ml) melted butter
  • 4 oz (120ml) grated extra sharp cheddar cheese
  • 4 oz (120ml) canned jalapeños
  • 1 egg

Directions

  1. Dice the jalapeños into small pieces.
  2. Combine all the ingredients except for the cheese and jalapeños in a large bowl and mix.
  3. Once the ingredients are combined, add the jalapeños and cheese and incorporate into the mix.
  4. Grease a 10 inch cast iron skillet liberally with butter.
  5. Bake at 400°F (204°C) for about 20 minutes or until done.
  6. Serve with butter, hot sauce, or honey as a side. Goes well with Chili con Carne
