Ingredients
- 1 cup (250ml) all-purpose flour
- 1 cup (250ml) yellow cornmeal
- 1 cup (250ml) milk
- 1/3 cup (70ml) white sugar
- 1 tsp (5ml) salt
- 3.5 tsp (17.5ml) baking powder
- 1/3 cup (70ml) melted butter
- 4 oz (120ml) grated extra sharp cheddar cheese
- 4 oz (120ml) canned jalapeños
- 1 egg
Directions
- Dice the jalapeños into small pieces.
- Combine all the ingredients except for the cheese and jalapeños in a large bowl and mix.
- Once the ingredients are combined, add the jalapeños and cheese and incorporate into the mix.
- Grease a 10 inch cast iron skillet liberally with butter.
- Bake at 400°F (204°C) for about 20 minutes or until done.
- Serve with butter, hot sauce, or honey as a side. Goes well with Chili con Carne
