Cave Aged Cheddar Twice Baked Potatoes

Ingredients

  • Russet potatoes (4)
  • Olive oil
  • Cream cheese
  • Scallions
  • Salt
  • Pepper
  • Sharp Cheddar cheese
  • A bit of fancy earthy tasting cheese (we chose aged cheddar)

Recipe

  1. Rub the potatoes with oil and coat liberally with salt and pepper
  2. Bake at 400 F° for 1 hour.
  3. Cut the potato carefully down the middle and carefully scoop out the cooked part
  4. Place cooked potato center in a bowl and combine with the rest of the ingredients. For an extra smooth potato filling use a ricer if you have one.
  5. Put the mixture back into one half of the potato and cover with cheese and more scallions.
  6. Put the potato back in the oven and heat until the cheese on top is melted.
