Ingredients
- Russet potatoes (4)
- Olive oil
- Cream cheese
- Scallions
- Salt
- Pepper
- Sharp Cheddar cheese
- A bit of fancy earthy tasting cheese (we chose aged cheddar)
Recipe
- Rub the potatoes with oil and coat liberally with salt and pepper
- Bake at 400 F° for 1 hour.
- Cut the potato carefully down the middle and carefully scoop out the cooked part
- Place cooked potato center in a bowl and combine with the rest of the ingredients. For an extra smooth potato filling use a ricer if you have one.
- Put the mixture back into one half of the potato and cover with cheese and more scallions.
- Put the potato back in the oven and heat until the cheese on top is melted.
